Be adventurous and try a little bit of ethnic cooking! Packed full of delicious beans, courgettes and bok choy you'll definitely want to show this Thai dish off at your next dinner party.

Thai Green Coconut Noodle Soup Recipe

Ingredients:
300 g Tegel Chicken Stir Fry
1 c Coconut Milk
1 1/4 c Chicken Stock
1 tbsp Basil, freshly chopped
1 Small Bunch Bok Choy, stalks sliced, leaves cut in half
2-3 Spring Onions, sliced
175g Long Life Singapore Noodles
Thai Green Curry Paste
1 Courgette, sliced
75g Green Beans, sliced lengthways

Directions:
Heat a wok or a deep frying pan with a dash of oil and stir fry Tegel chicken until golden. Add Wattie's Thai Creations Thai Green Curry Paste and cook stirring for 2 minutes

Add coconut milk, chicken stock, green beans, courgette and bok choy stalks, simmer gently until tender, about 4-5 minutes.

Add noodles, bok choy leaves and spring onions, cook for a further 2-3 minutes, add basil and season with salt and pepper.

Serve immediately.
