Simply Seafood -Scallops with Bacon Recipe
Ingredients:
Salt to taste
Freshly Ground Black Pepper to taste
50g Butter
24 Scallops
4 Rashers Streaky Bacon
Directions:
Wash the scallops, drain well and pat with paper towels.
Season with salt and pepper. Remove any rind from the bacon.
Cut into strips long enough to wrap around each scallop.
Thread onto little skewers and brush with melted butter.
Place under a pre-heated grill and cook for 5-6 minutes, turning the skewers occasionally and brushing with butter.
Suggested wine match: Vidal Estate's Chardonnay is a peachy, silky Hawke's Bay wine that works well with both the scallops and the bacon.
