2 tbsp Olive Oil 2 tbsp Pickle 1 tsp Mustard 1/2 c Cheese, grated
425g Baked Beans 1/2 Red Onion, chopped 1 Celery Stick, chopped 1 Whole Chicken cut into 4 Large Portions 2 tbsp Chutney Sauce plus 1 tbsp for beans 4 Slices Ham
Directions: Heat oil in an ovenproof saute pan. Add the chicken, brown well, turning often. Mix the sauce and pickle together, spread over the chicken. Place into a 180c oven for 15 minutes. Add a slice of ham to each chicken piece, top with the cheese. Cook for a further 5 minutes approx. until the chicken is cooked through. Remove the chicken, keep warm. Place the pan onto heat, add the celery and onions, cook for 2 minutes until softened. Add the remaining ingredients. Heat and simmer for 2-3 minutes. Serve the chicken on warm plates with a big chunk of ciabatta bread.
