Picnic or BBQ Enchiladas Recipe

Ingredients:
1 tbsp Oil
½ Small Onion chopped
1 tsp Curry Powder
1 c Grated Cheddar
4 Flour Tortillas
1 can Red Kidney Beans, drained
4 tbsp Salsa
4 tbsp Sour Cream
4 pieces of Tin Foil

Directions:
Heat the oil in a frying pan and add the onion. Fry for three minutes then add the curry powder.
Turn down the heat and add the can of beans.
Heat then mash all together.
Set aside.

Spread the flour tortillas out on the bench.
Divide the beans between them, and place in the middle of each.

Spread across the centre leaving 2 cm each side.

Spread 1 Tbls of salsa onto the beans, then 1 Tbls of sour cream.

Sprinkle the grated cheese evenly between the four tortillas.

Then roll up by folding each one, starting at the sides and rolling front to back.
Wrap up with tin foil.

Heat on a BBQ if you have access to one, or bake for 15 mins at 180°C before leaving the house for your picnic.
