Dutch Apple and Cheese Pie Recipe

Ingredients:
80g Butter
1 tbsp Soft Brown Sugar
A sprinkle of White Sugar to glaze
2 c Flour
Pinch of Salt
50g Grated Mild or Edam Cheese
1 tsp Cinnamon
Zest and Juice of 1 Lemon
2 tbsp Loose Sultanas
6 Apples, sliced and cored

Directions:
Pastry: Mix together the flour and salt, rub in the butter using fingertips until the mix resembles fine bread crumbs. Add 3-4 tbsp chilled water, mix together with a knife. Collect into a ball, knead for a few seconds to combine. Cut in half, roll out to suit a deep pie dish approx 23 cm round.
Pie Filling:
Place apples, sugar, cinnamon, sultanas and lemon zest and juice into a bowl, mix well. Line a greased pie dish with one pastry circle, add the apple filling, top with cheese. Brush pastry edges with a little water, add the top pastry circle, seal the edges. Cut a couple of steam holes into pastry, decorate with any surplus pastry. Brush with water, sprinkle over a little sugar to glaze. Bake at 180c for 35-40 minutes until golden. Serve warm or cold with ice-cream or custard.
