Corn Cakes with Feta & Bacon Recipe
Ingredients:
1 tsp Baking powder
1/2 tsp Salt
1 c Flour
1/2 c Milk
2 Eggs, beaten
4 Rashers Rindless Bacon, diced
100g Feta, crumbled coarsely
3 tbsp Coriander or Parsley, chopped
2 Cloves Garlic, finely chopped
3 Cobs Sweetcorn, cooked
Directions:
Preheat the oven to 200°C
Put the flour, baking powder, milk, eggs into a bowl and
beat until smooth.
Slice the kernels off the corn cobs using a sharp knife.
Separate the kernels from each other and add them to batter with the bacon, feta, coriander, garlic and salt. Mix well.
Fry large spoonfuls in moderately hot olive oil until well browned on each side.
Place the corn cakes on paper towels, on an ovenproof tray and put in oven for 5 minutes.
Serve with sour cream and spicy chutney or better still,
chilli jam.
