1 c All Purpose Flour 1 tsp Salt 1 tsp Baking Powder 2 Eggs Cooking Oil
4 X 120g Snapper Fillets 3/4 c Beer
Directions: In a large bowl, mix together flour, salt, baking powder, and 1 tsp dill. Add beer, and eggs; mix well.
Dredge the fillets in seasoned flour and place fish fillets in batter mixture, coat well.
Heat deep fryer to 375 degrees F (190 degrees C). Place fish in hot oil, and fry until golden brown.
Cook fish in batches to maintain oil temperature. Serve with aioli and chips.
AIOLI
INGREDIENTS: 4 cloves garlic, minced 2 egg yolks 1 cup extra virgin olive oil 2 teaspoons lemon juice salt to taste ground black pepper to taste
DIRECTIONS: In a medium bowl, beat eggs well with a wire whisk. Stir in garlic. Gradually add oil in a thin stream, beating constantly until light and creamy. Season with salt and pepper. Stir in lemon juice. Refrigerate
