Barbecued Chicken Drumsticks with Red Onion, Mango and Chilli Relish Recipe
Ingredients:
1 tbsp Sugar
Salt to taste
2 Garlic Cloves, crushed
4 tbsp Vegetable Oil
2 tbsp Mint chopped
10 Chicken Drumsticks
1 Red Onion, finely chopped
Juice and zest of 1 large lemon
1 Chilli, thinly sliced
2 Mangos, peeled, stoned, diced
Directions:
To make the relish, put the onion, water, sugar, chilli and 1 tablespoon of the oil into a small saucepan.
Bring to the boil and simmer until the liquid has reduced by half.
Remove from the heat and cool completely.
Stir in the lemon or lime zest and juice, mangoes and mint.
Taste and season with salt.
Toss the drumsticks, garlic and the remaining 3 tablespoons of the oil together and barbecue (or panfry or roast) them until well cooked.
Serve the drumsticks on lettuce leaves, sliced cucumber and watercress with the relish on top.
