A Cure for the Common Chicken Recipe

Ingredients:
1 Onion, sliced
2 tbsp Oil
500mls Milk
1 c Cheese, grated
375g Pasta Spirals
2 Garlic Cloves, crushed
1 Tomato, diced
2 c Pumpkin, chopped
1 tbsp Pumpkin Kernels, toasted
1 pkt Cook in the Pot, Apricot Chicken
1 Maggi Potato Bake Meal Base Sour Cream & Chives
1kg Fresh Chicken Portions
Zest & Juice of 1 Lemon & 1 cup Water
2 tbsp Chilli Minced

Directions:
Heat a griddle pan or saute pan and add chicken portions to colour (a griddle pan gives attractive markings).

Meanwhile, blend the next four ingredients ( apricot chicken, chilli sauce, chilli, onion )in a blender to make a thick glaze.

Brush glaze over the chicken to coat and flavour.

Bake at 180c for 25-35 minutes until tender, brushing over glaze during cooking.
Cook the pasta in boiling water for 15-20 minutes until tender, drain, refresh and drain again.

Heat oil in a saute pan, add the pumpkin and garlic, saute 4-5 minutes.

Mix the Maggi sauce mix and milk together, pour over the pumpkin.

Season. Simmer for 10 minutes, then blend with the grated cheese. Toss through the cooked pasta and diced tomato, serve with the chicken sprinkled with toasted pumpkin kernels.
